Mr Shin, The owner of Kiriyama Udon Japanese Restaurant, who was formerly a South Korean ambassador to Japan, discovered his love for the art of udon during his diplomatic service. He underwent a direct apprenticeship with a Japanese udon master, bringing this newfound passion back to Korea. Kiriyama Udon is committed to preserving authentic flavours, evident in every dish served there. The essence of tradition shines through in every dish, reflecting the owner's genuine appreciation for the artistry of udon and his desire to preserve traditional flavours.
During several months of part-time work here, I have developed a genuine fondness for the rich and flavorful homemade udon the restaurant makes. The head chef takes great care in handcrafting the udon noodles early every morning, using pure wheat flour for the best flavour.
When an order is received, the udon noodles are meticulously prepared, starting with boiling in the noodle pot, followed by a precise 15-minute simmer in a pressure cooker. What sets Kiriyama apart is its unwavering commitment to freshness and quality. Any unused udon is discarded after a specific time frame, ensuring that only the finest udon is served to their valued customers.
Kiriyama also takes great pride in its udon broth, made by brewing Japanese fresh ingredients over an extended period.
